Senior Sous Chef required for busy 4* Hotel in Sligo. Ideal candidate is a current Senior Sous or Sous Chef with 3+ years 4* experience in a similar type property. You will be "hands on" proven at working in a creative team, using your initiative and supporting Executive Head Chef in operating Kitchen to new C-19 regulations and guidelines, You need to be motivated, flexible, efficient and results focused. Role Responsibilities. · Manage busy Bistro/ Brasserie Lounge and Hotel Restaurant food trade, all day food service in outlets and Banqueting. · Experience in Weddings and Banqueting also required, ideally up to 400+ guests. · Deliver consistency and excellent standards of food, service and attention to detail. · Fully involved in kitchen operations daily and experience to work in all areas. · Ability to mentor and train the team in all procedures. · Liaising with Executive Chef on menus, ordering, training, daily procedures · Take lead on all hygiene matters, cleaning rotas, HACCP, H/S, Covid-19 plan · General kitchen supervision and management responsibilities. . Take active role in updating menus, daily specials, costing, sourcing ingredients, Requirements. · 3+ years Senior Sous / Sous Chef experience in 4* Hotel. · Excellent salary, conditions and benefits. · Free carparking available. · Fluent English written and spoken is required. · Candidates require full legal status to live and work in Ireland - No work permit available.
