Sous Chef required for a busy four star establishment in Sligo. Amazing opportunity for an experienced Sous Chef in a busy four star hotel. The ideal candidate will possess the following: Have a genuine passion to produce high quality food. Have the ability to run a very paced kitchen in the absence of the Head Chef. Have strong leadership skills and ability to train and manage staff. Have a keen interest in food production and menu planning. Have a thorough understanding of and commitment to HACCP and kitchen hygiene. Be able to develop and suggest ideas for potential new menu items. Easily work on own initiative or as part of a team. Have a strong work ethic and customer focus. Key Responsibilities: Contribute to the production of food items in accordance with instructions from Executive Head Chef. Be familiar with the menu and with any "specials" of the day. Ensure all dishes are prepared in a timely fashion. Ensure high standards of Hotel are met. Avoid wastage and comply with portion control. Ensure HACCP compliance within the kitchen and at all times. Ensure the kitchen equipment is in working order; report any maintenance issues to the relevant manager. Assist the Head chef with stock control, orders, etc. Assist the head chef in all aspects of staff management, including training and development.
